Vintage 1950’s Tomato Soup Cake Muffins

This vintage tomato soup cake recipe is a delicious and moist spice cake, that can be topped with powdered sugar or cream cheese frosting. You can make it as a cake or muffins, like I did!

Yes I know.  The thought of putting tomato soup in a cake, let alone muffins is causing icky faces everywhere.

Just like what happened when I made my Chocolate Mayonnaise Cake!  But stick with me ok?  This cake recipe, that I’ve made into muffins, is full of heavenly spices, and there is absolutely no tomato soup flavour at all!

I think muffins are the perfect way to bake a cake.  Just a handful (or two if they are really big) muffins can be baked in batches, frozen to keep fresh, and enjoyed with coffee or tea, for breakfast, any time at all.   This recipe is like taking your favorite spice cake batter and making into muffins or cupcakes if you prefer.

 

I think the texture is heavy enough to call them muffins, and they are just so yummy loaded with sweet raisins and finely chopped walnuts.  We made it eggless too – not because of any allergies, but because I ran out of eggs!

 

You will need: flour, sugar, baking powder, baking soda, tomato soup, unsweetened applesauce, cinnamon, allspice, ground cloves, raisins and chopped walnuts.

No need to wait for BBQ season and summer weather! Sounds awesome right? This is the easy family supper you need right now after a very hectic week.

 

All you need to do is get out the slow cooker, throw in a pork butt or pork shoulder, some water or ginger ale, your own personal spices and let it cook….slowly….until you have pork that melts in your mouth, shreds easily and becomes the best pulled pork sandwich anywhere!  Are you with me?

You will need…. 3 to 5 lb pork shoulder (depends on the size of your crowd), 2 cups of water, Salt and pepper, 3-4 whole cloves, 2 chopped cooking onions, 2 pints of my Homemade BBQ Sauce!

Orange Cranberry Bundt Cake Recipe

This Orange Cranberry Bundt Cake Recipe is so delicious- perfect for Brunch or a Potluck! The fresh orange juice and zest give it a light fragrant taste, and the dried cranberries add just the right amount of tartness.  The cake is moist and soft, but also has a dense texture like a pound cake.

Bundt cakes are always so generous and this one is no exception!  You can easily serve 8 people with this amazing cake.

This recipe is often called Orange Cranberry Pound Cake and it’s one of my Grandma’s old fashioned cake recipes.  I think today the term ‘vintage’ is used, but to me it’s old fashioned goodness.  🙂

Italian Easter Pie

This Sweet Italian Easter Pie is light and creamy, with a sweet crunchy pie crust, almost like a sugar cookie!  The ricotta filling is light and has a gentle orange zest that enhances the decadent chocolate chips.  Such an elegant dessert, but honestly one of the easiest pies I’ve made in a long time.

There is no pie crust rolling involved!  I’ve adapted the recipe (that makes two ricotta pies) to a tart pan, and then the second pie which is smaller, into a regular pie plate.  You can adjust the sugar too.  The original recipe calls for 1 cup of sugar in the filling, but I reduced it to 1/2 cup and it’s just perfect!  You can either halve the ingredients, or make both and freeze one!  Which is what I did and then took it into work.

You will need: Ricotta cheese (3 – 475g containers) 7 eggs, white sugar, vanilla, an orange for zesting, flour, baking powder, vegetable oil, dark chocolate chips

Brownies should be gooey, right?  Rich and chewy too.  That’s what I was going for with this easy gooey chocolate brownies.  Easy to make, and packed with so much gooey chocolate goodness.  Is your mouth watering yet?  Mine too!  You know the Brownie Explosion dessert you can sometimes get at Dairy Queen or Hot Fudge Brownie from Roy Rogers?  These chewy fudge brownies are so much better.  Yum. Yum.

These are easy homemade brownies.  And what makes them so easy to make?  Well this is a brownie recipe that uses your favourite brownie mix.  Yep, we are going to use a mix.  That’s the base, and then we’ll add some extra fudgy goodies, so that you will have a chewy fudge brownie.  We love easy dessert recipes and I’m always looking for ways to help you get started baking!  That’s the number 1 comment you all tell me, that’s it hard to get started to bake, but that you love it once you do!

This is the best brownie recipe in the world, trust me ok!

You will need: Your favorite brownie mix, 1/4 cup chocolate chips, 1/4 cup semi-sweet chocolate chunks, Chocolate Sauce.
